Banana Chocolate Chip Mini Muffins

Makes 36 Mini Muffins

Ingredients:

  • 3 ripe bananas

  • 1/2 cup coconut flour

  • 1 scoop BeWellByKelly vanilla protein powder

  • 1 tbsp ground flax seed

  • 3 eggs

  • 1/4 olive oil

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • mini semisweet chocolate chips (optional, you could also add chopped walnuts in place)

Preheat the oven to 350. Mash the bananas in a large bowl. Add the rest of the ingredients except for the chocolate chips. Mix well and pour the batter into a lined mini muffin tray. Top each muffin with a few chocolate chips. Bake for 12 minutes. When a toothpick comes out clean, it’s time to enjoy!
