Chocolate Chip Pumpkin Bread
Makes 1 Loaf
Ingredients:
Wet
3 eggs
1 cup pumpkin puree
2 tbsp melted coconut oil
1 tbsp maple syrup
1 tsp vanilla extract
1/8 cup almond milk
Dry
1 scoop vanilla protein powder (I use BeWellByKelly brand)
1 tsp baking soda
1 1/4 cups almond flour
1 tbsp pumpkin spice
1 tsp ceylon cinnamon
1 tbsp ground flax
Pinch sea salt
Additional
1/4 cup chocolate chips
Preheat oven to 350. Line a loaf pan with parchment paper and grease it with coconut oil. Combine the wet ingredients in a large bowl and the dry ingredients in a medium bowl. Then pour the dry ingredients into the wet ingredients and stir to combine. Then fold in the chocolate chips and pour the batter into the loaf pan. Bake 45min - 1 hour, until a toothpick comes out clean. If it starts to get too brown, lower the temp to 300 until it is cooked through.
