Coconut Chia Pudding

Servings: 4

Ingredients:

1 - 14oz can of light coconut milk

5 tbsp chia seeds

1 tbsp maple syrup

1/2 tsp vanilla extract

1/4 tsp cinnamon

Pinch of salt

In an airtight container, stir all of the ingredients and stir to combine. I prefer a mason jar that you can seal and shake. Place the pudding in the fridge and shake again to break up any chia clumps about 2 hours later. Let set overnight and then top with your favorite toppings: fresh fruit, coconut flakes, nuts, whatever you like!
