Homemade Granola Bars

Ingredients:

  • 3 ripe bananas

  • 1 egg

  • 1tsp vanilla extract

  • 3 tbsp almond butter

  • 1 3/4 cup organic quick cooking oats

  • 1 cup finely chopped walnuts (if you want nuts)

  • 1 scoop BeWellByKelly Vanilla protein powder

  • 2 tbsp chia seeds

  • 1/2 tsp ceylon cinnamon

  • Pinch of sea salt

  • Almond milk if needed (no more than 1/2 cup)

  • 2 tbsp mini chocolate chips (semi sweet or dark)

Preheat oven to 350. Line a 9” square baking dish with parchment paper. Peel and mash the bananas and mix with the egg, vanilla and almond butter. Add in the rest of the ingredients and stir until well combined. The batter should be thick but use almond milk as needed to make it more stirrable. Pour batter into the pan and spread it out evenly. Sprinkle the chocolate chips on top and gently press into the batter. Bake for 20-25 minutes. Cool completely and cut into bars. Store in an airtight container in the refrigerator for up to a week or the freezer for 2 months.
