Mason Jar Taco Salad
Makes 4 Servings
Ingredients:
Avocado Salsa Verde (recipe below)
1.5 cups purple cabbage, sliced
1 can black beans, rinsed & drained
1 pint grape tomatoes, sliced
1.5 cups frozen corn, defrosted & drained
1lb ground turkey, browned and simmered in Siete mild taco seasoning
1 avocado, diced
1 head of romaine, chopped

Divide the Avocado Salsa Verde between 4 mason jars, enough to be the dressing for each salad (you may have some salsa verde left over). Then layer your mason jar with the purple cabbage, black beans, tomatoes, corn, ground turkey, avocado, romaine and cilantro. Store in refrigerator up to 5 days. Pour onto a plate when ready to serve and enjoy!
Avocado Salsa Verde -
Ingredients:
1 avocado, seeded & peeled
4 tomatillos, quartered
1/2 green bell pepper, chopped
1/2 yellow onion, chopped
1/2 jalapeno, chopped
1/2 cup fresh cilantro leaves
1/4 water
juice of 1 lime
3 pinches of salt
Add all of the ingredients to a blender and blend until well combined.
